Gelation Time and Rheological Property of Gelatin Gels Prepared with a Phosphate-buffered Saline-ethanol Solution

This investigation was designed to develop an understanding of the gelation time and rheological properties of gelatin gels prepared with a phosphate-buffered saline (PBS)-ethanol solution under varying circumstances. Results obtained from oscillation time sweeps and oscillation strain sweeps were based on rheological testing using an Ares-G2 and were used to identify the gelation time and storage modulus (G’). The experiments at room temperature (25°C) reported involve gelatin concentration, PBS concentration and sodium chloride (NaCl) concentration which result in gelation times in the range ca. 100–103 min and G’ in the range ca. 102–103 pa. The results indicate that phosphate ions may accelerate the gelatin gelling process, and may aid in the production of gelatin gels with higher G’. However, high NaCl concentration hinders the gelling process, which causes longer gelation time and lower G’.
