Actual Reported Intake and Benefits of Dietary Fiber as Related the Perceived Intake of Dietary Fiber Among College Students Enrolled in a Basic Nutrition Course

The purpose of the study was to determine the relationship between the actual reported intake of dietary fiber to the perceived intake and benefits of dietary fiber in college students enrolled in a basic nutrition course at Kent State University. The study also examined the relationship between the actual reported intake of dietary fiber and the level of knowledge about food sources and health benefits of dietary fiber. A pre-test questionnaire was administered to participants enrolled in the 2019 Science of Human Nutrition class at Kent State University. The questionnaire included demographic questions, questions to measure knowledge of the health benefits and food sources of dietary fiber, and questions to assess the perception of individual intake and perceived consumption of dietary fiber for health. To determine actual intake of dietary fiber, the participants also provided a three-day dietary record which had been completed for an independent course project. A total of 69 students, mostly female (71.0%) and Caucasian (85.5%), between the ages of 18-24 years old, participated in the study. The results determined that there were no significant relationships (p>0.05) between any of the variables measured. The study did not find any significant correlation between actual dietary fiber intake and perceived intake of dietary fiber (p=.091), perceived benefits of dietary fiber (p=.599), knowledge of health benefits of dietary fiber (p=.322), or knowledge of food sources of dietary fiber (p=.083) in college students enrolled in a basic nutrition course at Kent State University. The research was limited by a small sample size (n=69) and the low level of knowledge about dietary fiber demonstrated by the majority of participants.
