MACKERTY, JENNIFER, May 2023 Nutrition and Dietetics SCHOOL FOODSERVICE DIRECTORS’ PERSPECTIVES ON POTENTIAL BARRIERS OF THE SCHOOL BREAKFAST PROGRAM IN THE STATE OF OHIO (101 pp.) Director of Thesis: Natalie Caine-Bish, PhD, RDN, LD The purpose of this descriptive study is to determine barriers, participation rate, and characteristics of the school breakfast program of schools with varying socioeconomic status, school size, and grade level in the state of Ohio. Twelve school foodservice directors in the State of Ohio volunteered to participate by answering a series of 22 unique questions electronically with two sections: characteristics of the school and potential barriers to the School Breakfast Program. Frequencies, means, and standard deviations were determined for data obtained. The top potential barriers found to the School Breakfast Program were time (42.40%) and costs (15.20%). The average participation of the school breakfast program was 27.22% (elementary schools), 25.73% (middle schools) and 22.27% (high schools). The average percentage eligibility for free and reduced breakfasts was 46.47% (elementary schools), 41.90% (middle schools) and 41.09% (high schools). Barriers do exist to the school breakfast program in the State of Ohio and while this study points to costs and time future studies need to be conducted to further examine barriers and ways to mitigate those barriers.
