Abstract
Dietary and microbial factors were evaluated in 21 healthy subjects and 21 subjects with severe dental caries. An interview-based 24-hour multiple-pass recall questionnaire was used to record dietary information. Supragingival plaque was collected from healthy teeth and carious lesions. The bacteria were identified and quantified using an unbiased genetic technique. Analysis of the dietary questionnaire revealed that the exposure time of carbohydrates on the teeth was significantly different between the groups; exposure time also correlated with caries increment. There were no significant differences between percent RDI calories, total carbohydrates, or body mass index. Analysis of the bacterial profiles in plaque showed that the most significantly disease-associated bacteria are
Streptococcus mutans
, Lactobacillus species, and Veillonella species. The significantly health-associated species are
Streptococcus mitis
,
infantis
,
pneumoniae
, and
oralis
. This study shows that eating behavior may be the most significant contributor to dental caries, which involves many different species.
