Perception of Ohio School Food Service Directors Towards Salad Bar and Its Implications: An Exploratory analysis

Food service directors (FSDs) are ultimate decision makers of introducing salad bar to school. Having salad bar in school cafeteria is believed to be one of the means of fighting high childhood obesity. The purpose of this exploratory analysis is to examine if there is difference in perception towards salad bar between food service directors who already have salad bar (n=268) and those who do not have salad bar (n=105) at their school cafeterias. Based on a survey of FSDs conducted by Ohio Department of Health we found out that those currently with salad bars have significantly higher positive perception towards salad bar. FSDs without salad bar are more likely to report barriers to salad bar. Since this report is based on exploratory data we recommend further study to be conducted solely for this purpose. Furthermore, providing FSDs the right information about salad bar would be of great importance in increasing the availability of salad bars in Ohio schools.
