Scraps and Leftovers: The Challenges and Strategies of Food Insecure University Students

The University of Akron (UA) has a food insecurity rate of 36%. This project was conducted during the spring semester of 2016 at the UA main campus. I used a mixed-methods approach including surveys, semi-structured interviews, participant observation, inviting publicly posted conversations, and monitoring social media. The survey results indicate that characteristics such as race/ethnicity, Pell grant eligibility, and status as “independent” are strongly correlated to food insecurity. Through ethnographic interviews, I discovered a number of relevant themes, including access issues and the use of risky coping strategies that could lead to negative health outcomes. Students manage social support for resource acquisition while protecting professional networks that can provide them valuable social capital necessary for career attainment. Other schools have emergency responses to food insecurity such as food pantries and specialized food programs, while UA’s response has been dilatory. Remediation for student food insecurity is necessary at individual schools and within the larger higher education system to support student success.
