The effect of modified atmosphere packaging and methyl jasmonate on the shelf life of lychee

Abstract Details

2019, Master of Science, Ohio State University, Food Science and Technology.
Lychee suffers an extremely short season due to the rapid pericarp discoloration caused by the anthocyanin degradation. However, modified atmosphere packaging (MAP) can effectively prevent the moisture loss and therefore delay the browning of the pericarp while methyl jasmonate (MeJA) is able to maintain the anthocyanin concentration. The objective of this research was to determine the effect of methyl jasmonate (MeJA) and modified atmosphere packaging (MAP) to extend the shelf life of lychee fruits. The MeJA-treated lychee fruits and the untreated fruits were packaged in either high-density polyethylene (HDPE) or polypropylene (PP) pouches which were flushed with different headspace concentrations of oxygen (O2) and carbon dioxide (CO2). Fruits not packaged or treated with MeJA were tested as control groups. All fruits were stored at 10 ºC and 90% relative humidity (RH) for 12 days. To test the effect of the different treatments on the shelf life of the lychee fruits, the headspace gases, fruit weight, pericarp color, pulp firmness, soluble solid content (brix), titratable acidity (TA), and anthocyanin concentrations were measured every three days during the 12-day storage. The result revealed that the MeJA-treated fruits had a better quality than those untreated, and the HDPE pouches showed a higher efficiency in preserving the fruit quality when compared with the PP pouches. Additionally, the 5% O2 and 5% CO2 mixed gases were more effective in delaying the fruit senescence than the 17% O2 and 6% CO2 mixture. As a result, the MeJA treatment and the HDPE pouches flushed with 5% O2 and 5% CO2 was the best combination for the shelf life extension of lychee fruits.
