Abstract
Although there is a tremendous effort to increase the food production at the present time, nearly 40 percent of food produced in the United State is wasted. While different stages of food supply chain contribute to the waste, the largest waste happened after processing and packaging, in retail stores or in consumers’ home, mainly because food has been spoiled or reached its stamped use-by-date. When the food products shelf-life is overestimated and may not reflect the actual time of spoilage, the objective of this study is to predict the microbial behavior of milk exposed to uncontrolled storage condition. The growth of Pseudomonas fluorescens in sterilized low fat (1%) milk is monitored under constant and variable temperatures. The population of P. fluorescens is periodically measured by pour-plating and plate-counting. Data are fitted to the modified logistic function and it provides a good fitness to model the growth of P. fluorescens under constant temperature as a function of time. Moreover, predictions of growth of P. fluorescens under temperature fluctuations are obtained using the growth parameters extracted from constant temperature experiments. The results show a good agreement between the predictions and actual growth. This may provide valuable information for a more precise shelf-life determination and reduction of food waste, particularly milk.
